Here’s a luxuriously creamy green sauce that needs to be part of your repertoire: Avocado Crema! It’s silky and rich, pairing the earthy, buttery notes of this green fruit with zesty lime and rich sour cream. It’s ideal for dolloping on tacos to add creamy, tangy notes: but the applications are endless. Try it on fish, as a dip for fries or quesadillas, or slathered on rice bowls. It’s a must try!

Ingredients in this avocado crema recipe

Crema is a thickened cream often used in traditional Mexican cuisine to dollop over soups, tacos, burritos, enchiladas. A traditional avocado crema would be made with actual Mexican crema. But this type of sauce can also be made with sour cream, yogurt, or mayonnaise. Our recipe takes inspiration from the rich cultural food tradition of this Mexican sauce. Here’s what you’ll need:

  • Sour cream or Mexican crema (or Greek yogurt and mayo; see below)
  • Mayonnaise adds a little richness
  • Lime juice
  • Grated garlic
  • Salt

Using Mexican crema

Mexican crema is a thickened cream often used in traditional Mexican cuisine. In texture, it falls somewhere between American sour cream and French crème fraîche. It’s richer than sour cream because it has a higher fat content.

Sometimes you can find Mexican crema at your local grocery store: look near the sour cream and creme fraiche. But not all grocery stores stock it, so you can also make your own! It’s a fun kitchen DIY that takes 48 hours to thicken. Go to How to Make Mexican Crema.

Storage info & how it stays greeen

Unlike guacamole, avocado crema stays green for days. There’s no need to put plastic wrap on the surface as is required with guacamole. There’s enough acidity in the lime juice to make the avocado stay green, instead of turning brown as it does naturally. Sounds crazy, but try it: it works! This avocado crema stays good refrigerated in a sealed container for up to 5 days.

Ingredients

Scale
  • 1 ripe avocado
  • ⅓ cup sour cream (or Mexican crema)
  • 1 tablespoon mayonnaise
  • 3 tablespoons lime juice (1 large lime)
  • ⅛ teaspoon grated garlic (about 1/4 clove)
  • ½ teaspoon kosher salt

Instructions

  1. Cut the avocado in half, pit it, and scoop both halves into a food processor (or small blender*).
  2. Add the remaining ingredients and blend until smooth. Store in a covered jar for up to 5 days refrigerated: it stays green without special storage instructions (unlike guacamole).

*Double the recipe for a standard sized blender.
